I'm A Sucker for Mexican


I thought I'd post what I made for dinner tonight...don't know if anyone checks this blog anymore, but I'll give it a try. So I found this Green Chile Tabasco Sauce and it's amazing! Not too hot (not nearly as hot as regular Tabasco) and so I wanted to make Mexican food so I'd have an excuse to use it! I made some tasty "fresh" tacos. I didn't use an exact recipe - I'm more of a "dump and taste" kind of girl.

Taco base: 1 lb. ground turkey, 1 onion, chopped, 1 cup of brown rice, and one can of chili beans. I cooked the turkey and onion together and then added the rest. I added chili powder, cayenne pepper, garlic powder, a little oregano, and cumin. I like adding rice and beans to my meat so that it goes further and it sticks to your ribs a little more.

Toppings: queso fresco (white Mexican crumbly cheese - you can buy it at walmart), cilantro, tomatoes, avocados, lowfat sour cream, spinach (instead of lettuce - it was all I had), salsa, and my favorite - green pepper tabasco.

I put all of this in some pan fried (without any oil) corn tortillas. Oh my gosh was it tasty!!! Very fresh tasting and I love the queso fresco because it gives it a different flavor than normal. Try it! It's great!

Peanut Butter Chocolate Treat.

I just found this new recipe and not only is it to die for but it's super easy to make. A new great treat for the up coming holiday season.

3 cups rice crispy cereal

1 cup peanut butter

2 Tbs melted butter

1 bag chocolate chips

powder sugar

In large mixing bowl combined rice crispy cereal, peanut butter and melted butter.
Sprinkle powder sugar in casserole dish then spread the above mixture evenly in pan.
Melt the chocolate chips in sauce pan and pour evenly over the top. Let cool and enjoy!
P.S. I have noticed the the best chocolate to use is the Ghiradelli Chocolate chips but any will do.

Pizza

We need to keep this blog going.... so I am going to post a new topic for this month.. Hopefully we will see some feed back...

California Pizza
makes 8 servings

1 Boblie pizza crust (or you can hand make it)
Mayo
Lettuce
Bacon
Avocado
tomato

Cook the pizza crust so that it is warm and a little brown.
Then spread the mayo on the bottom of the crust
While you are browning the crust cook up the bacon so its nice and crispy
Once the crust is out and the mayo is on sprinkle the lettuce, bacon, avocado and tomato on the top.
Cut up and enjoy.

Super Fat cake but really yummy!!!

Well no one has posted anything new so I am going to. I thought that since Easter is coming up that everyone might want a nice fattening cake to eat. Its really good and I made it up myself:)

Spice cake mix
Vanilla cake mix
1 Large Cream cheese frosting
1 coconut pecan frosting

Bake the spice cake and vanilla cake as directed. let cool completely. Cut into layers. (I did about 4 2 on the spice and 2 vanilla). On a plate lay one layer of spice cake down and put some of the coconut pecan frosting on it, then layer it with the vanilla and repeat the frosting process till all the layers have been put on. Then once the last layer is put on cover the whole cake with the cream cheese frosting. Its so good and rich. Enjoy!!

Breakfast Burritos

OK so I picked breakfast foods for this month because I don't really have any great recipes, but since i suggested it I have to post something right?

Tortillas
Eggs
cheese
bacon (strips or just bacon bits)
hash browns
avocado
sour cream
salsa

Basically you just add as much of these ingredients as you want to make great breakfast burritos.
I like to scramble the eggs adding in bacon bits and cheese. Then place it in a tortilla adding the other ingredients on top. It's a really good hardy breakfast. I also like to make this for dinner sometimes.

Fancy French Toast

Tom Loves french Toast so I found this recipe that makes it taste more manly and hearty.

Get one loaf of French Baguette Bread, Cut it on a diagonal and place in a 13x9 Baking dish.
Mix up normal french toast ingredients and pour over the baguette.
Put in the oven at 350 for 40-45 minutes, checking it often.
Take out when the tops of the bread are a golden brown.
Scoop out and serve with syrup and Bacon.

Its very filling and it stores pretty well.

White Bean Chicken Chili

2 T. Olive Oil
2 Garlic Cloves
1 Onion
8 Cooked Chicken Breasts (Amber got this idea from the Barefoot Contessa, where instead of boiling the chicken, you drizzle the chicken with olive oil, salt and pepper and bake it at 350 for 30 min. or so...it tastes so much better than boiling it)
5 C. Chicken Broth
4 t. Cumin
2 11 oz cans white shoepeg corn + juice
2 4 oz cans of chopped green chilies
Juice of 2 limes
4 14 oz cans white beans

Heat pot and add Olive Oil, garlic, and onion for 1 min. Add all other ingredients and bring to a boil. Reduce heat and simmer for 5 min.

Serve with Chips, cheese and sour cream.

Lame

Since you are all lame except for Andi, she gets to decide what the assignment if for March. So Andi, What is it going to be? Crock Pot? Desserts? Chicken? Breakfast Treats? You name it! And thanks for keeping us going!!!

Smoky Chicken Soup

2 T. Olive oil
2 Med. carrots, peeled and chopped
2 stalks celery
1 large onion, peeled and chopped
2 cloves garlic, chopped
1 to 2 chipotle chili in adobo, chopped, plus a spoonof sauce from can
salt and pepper
1 t. dried thyme
6 C. Chicken broth
1 large sweet potato
1 lb. Chicken Tenders
4 scallions
1/4 c. cilantro leaves, chopped
1/2 c. sour cream for garnish

Heat a soup pot over medium-high heat w oil. Add carrots, celery and onions to the pan.Add garlic, chipotle and adobo sauce and stir. add salt, pepper, thyme, and cook together for 1 min. Add 1 cup chicken broth and reduce for 1 min. Add rest of the chicken broth. Raise heat to high. Bring soup to a boil. Simmer for 10 min. Peel and cut sweet potato into bite size pieces, and cut chicken into bite size pieces. Add to pot and cook for 5 min. Turn heat off and add scallions and cilantro. Serve each portion with a spoon of sour cream on top, and serve with chips. The yummiest soup ever!

I'm Hungry

So even though mine was a little late I posted a soup recipe in hopes that some of you would do the same. I love soup and was excited to get some new ideas and recipes, but nope. Nothing! I really like doing this recipe blog but we can't have a good blog if no one post anything. I know you girls have some great meals out there so lets see them. I like trying the recipes that I think my husband (who is the pickiest eater alive) will like. So come on, I need so new ideas, I'm getting hungry.

Taco Soup

1 lb. ground beef
1 can kidney beans
1 can chili beans
1 can pinguito beans
1 can black beans
1 lg. can diced tomatoes
1 can black olives
1 4oz. can green chilies
1 pkg. of 1 oz. ranch seasoning mix
1 pkg. of taco seasoning

Brown ground beef, drain. Add to big pot. Then add beans with all the juice. Add crushed tomatoes, sliced olives, and green chilies. Then add taco & ranch seasoning. Cook until boiling. Serve with Cheese, corn chips, and sour cream.
